Where do drummies or pig wings come from?

This cut is the same as a ham short shank. It is the tibia bone from the hind leg of the pig. They may or may not be enhanced with a phosphate solution. Several companies make the product including Farmland and Swift. It is not legal to call them pig wings as the poultry industry has threatened a legal stance. However, each company has their own catchy name for the products. They make great snack or finger foods. The cooking process causes the meat to shrink away from the bone which presents a handle similar to a frenched rib bone for holding the product during consumption.
